Zucchini Pasta - A Raw Favourite!

If you haven't yet bought a spiralizer, then every kitchen would benefit from having one. Easy to use and makes preparing and eating food so much fun especially with children.

Ingredients

2 Zucchini (Courgettes)
3 Tomatoes
1 Clove Garlic
1/2 White Onion
2 Dates, (stones removed)
4 Basil Leaves
Olive Oil
Sea salt
Pepper

Method

Use the spiralizer to make spaghetti out of the zucchinis

Chop tomatoes in half.

In a food processor mix the garlic, onion, dates, basil and a splash of olive oil. Pulse until you have a paste consistent. You may need to scrape down the sides of the processor as you go.  If you prefer a less sweet sauce, only use one of the dates or omit completely.

Add the tomatoes and pulse again until all is blended.

Season with sea salt and pepper.

Add the sauce/paste to your zucchini pasta, drizzle a little oil over the top and enjoy.
