Healthy Berry Mousse With Chia Seeds

What do I need? The Shopping List!

Cream
Fruit
Honey/Maple Syrup
Vanilla extract
Chia Seeds

Many people have the “best of intentions” to eat healthily but there are so many “superfoods” now, it is overwhelming! How do you fit everything in? There is after all, only so much one can eat, good or otherwise, in a day! A great tip: Instead of trying to eat every superfood, just look at what you are eating and make everything you put into your system count. What goodness does it provide you? Does it provide something beneficial to your body and health?

Have any of you heard of the superfood Chia seeds? Their function in cooking is as a gelling agent, thickening agent, and can replace eggs in recipes. Check out your local health-store to see if they stock them. You will definitely find them online.

This recipe came as a result of having a huge amount of blackberries in the garden. So let's have a go at making Chia Pudding.

This is the perfect treat, easy to do and a great way to involve the kids and introducing fruit, nuts, oils and fish for getting omega 3 into their diet.

The quantities are approximate:

250 ml cream (your choice – coconut, almond, or dairy)
3 handfuls of berries (strawberries, blackberries or blueberries)
2 table spoons of a natural sweetener (maple syrup or honey)
1 tea spoon vanilla
2 table spoons chia seeds (our guest of honour!)

Blend all of the above together and get as much air into the mixture as possible. Immediately after, transfer to bowls and refrigerate for 3 hours.

As a result, we now have  a mousse. If you are feeling a little 'naughty' you can add a little white chocolate but do try and keep it healthy.

A note on texture – This recipe used whole chia seeds but you may prefer to grind them into a powder for a smoother texture.

Chia seeds are great. There are so many benefits to list, see here. One note I do want to add, the calcium found in this little black seed is absorbed super effectively, making it a super good for bones. giving them the worthy title of being a superfood!
