Man Food - Tortilla de Patatas

This Spanish dish called tortilla de patatas is a good and satisfying meal for a hungry man. It is easy to make and requires very few simple ingredients, such as potatoes and eggs. But it doesn't get more manly than that!

Ingredients

3 medium size potatoes
1 medium size onion
3 eggs (medium sized)
Extra Virgin olive oil
salt

Estimated time: 5 minutes preparation & 25 minutes cooking

Method

1. Peel the potatoes and onion. Cut them in half and then into quarters. Chop finely trying to be consistent in thickness.

2. Heat a generous amount of olive oil in a pan. The amount should be enough to half cover the potatoes and the onion. Fry for about 5 minutes on a high heat. Add salt and cover the pan and reducing the heat to medium. Keep stirring the mix every once in a while. When the potatoes are almost cooked, turn the high up to heat again for another 3 or 4 minutes until golden brown in colour. Drain the potatoes and leave to one side.

3. Beat the eggs in a bowl and add a little salt. Then add the potatoe mix to the eggs and mix well. Heat a little oil in a frying pan to prevent the totilla from sticking. Once the oil is hot, add the mixture. Return to a medium heat and keep moving the pan. After approximately 5 minutes turn the tortilla onto a plate and return to the frying pan to cook the other side. Cook for a further 3 or 4 minutes. Turn onto a dish and serve.
